Hojaldres Deliciosos, May 4, 2013

We spent a great afternoon at Nancy's in the company of Maria, her husband and the boys. Maria and her husband made a delicious Colombian pastry called hojaldre. This is a flaky simple fried pastry made with wheat flour, eggs and orange juice. I had not had tasted those in so, so long that when I googled images of it, there wasn't anything that resembled what I used to make for my aunt back in Colombia.

Recipie:
2 cups of wheat flour
1 teaspoon of salt
2 teaspoons of sugar
1/2 of reaspoon of baking powder
2 eggs at room temperature
1/4 stick of melted butter
Juice of freshly squeezed orange

Mix all of the ingredients, squeeze the orange juice onto the mix and start kneading until everything is well incorporated. Flatten the dough with a rolling pen into a very thin layer aprox. 1/16" of an inch, or thinner than a penny. The thinner the layer, the flakier the crisp.
Cut the thinned out dough either into triangles or circles, your choice. Heat up a deep saucepan, heat up vegetable oil and deep fry the triangles. Flip them until light brown and cripy. Use a paper towel to absorb the excess oil. Sprinkle regular granualted sugar, powder sugar or dip the tringles tip with chocolate or caramel. I prefer regular sugar. Enjoy.
